This contains bacon, cheese, garlic and onions. How bad can it be? To quote my husband, "very, very, very not bad!"

Yummy Baked Cauliflower

5 or 6 slices bacon
½ onion, minced
4 cloves garlic, minced
2 C cauliflower, chopped
2 eggs, beaten
1 C grated parmesan cheese

Preheat oven to 350°

Fry the bacon to crisp, then crumble (or do it the lazy way -- roughly chop the raw bacon into little pieces first, then fry it all up to crisp). Remove bacon to paper towels to drain, leaving the fat in the pan. Add the onion and garlic to the hot fat and sauté them until golden*. Add the cauliflower and cook one minute more. Remove to a bowl, add the eggs, cheese and bacon. Spoon into a buttered baking dish and bake until crispy brown on the edges and lovely-looking (some time between 30 and 60 minutes, depending on how deep your baking dish is).

* The original recipe called for cooking the onion and garlic in 2 T of butter, but I don't see the point of wasting good bacon fat. Heh heh heh...
