I Googled these up in desperation, when all of my standard pork chop recipes seemed dull. Super-fast prep, no special ingredients I have to shop in advance for, and man, does it smell good when it's baking!

Baked Pork Chops With Apple & Sherry

4-6 pork chops
2-3 large apples, peeled, cored, and sliced
¼ C brown sugar, or a bit less
½ tsp cinnamon
2 T butter
½ C dry sherry

Brown the chops in a skillet. While the chops are cooking, preheat the oven to 350°F. Arrange the apple slices in an ovenproof pan that's big enough to hold all the meat in a single layer. Sprinkle apples with the brown sugar and cinnamon, and dot with the butter. Top with the pork chops, then pour on the sherry. Cover all with foil or a lid, then bake for about 1 hour or until tender.
