Banana Crumb Cake

Topping:
1/3 C quick oats
¼ C flour
1/3 C packed brown sugar
1/8 tsp nutmeg
3 T chilled butter
½ tsp cinnamon
½ C chopped walnuts
Mix together oats, brown sugar, flour and spices. Cut in butter to form coarse crumbs. Stir in nuts and set aside.

Cake:
1 ½ C flour
2 large eggs
¾ C quick oats
2 large, ripe bananas
1 tsp baking powder
½ tsp baking soda
¾ brown sugar
¼ C oil
1 tsp vanilla
½ C plain yogurt or soured milk

Sift together flour, baking powder and baking soda. Mix in oats. In separate large bowl, mash together bananas and brown sugar. Add eggs, yogurt, oil and vanilla. Stir flour mixture into banana mixture until just combined.

Pour batter into greased 10-inch round cake pan or bundt pan. Sprinkle topping over batter. Cook at 350° F for approximately 40 minutes.
