This is my recipe, adapted from Betty Crocker. It uses a cheater no-roll crust because I'm tired.
Preheat oven to 425°F.
1½ C white or whole wheat flour
½ C oil
¼ C ice water
½ tsp salt
Optional: 2 T shredded Parmesan
Mix to combine and press into 9" pie pan, making sure to spread it evenly and all the way up the sides. Put pan on cookie sheet lined with foil before proceeding.
1 C chopped veggies and/or meat
1 C shredded cheese
2-4 T minced onion
2 C milk
¾ tsp salt
¼ tsp pepper
Spread veggies, meat, cheese, and onion evenly in crust. Beat eggs slightly, then beat in remaining ingredients and combine thoroughly. Pour carefully into pan.
Bake 15 minutes at 425°, then reduce heat to 300°. Bake until knife inserted comes clean, 30-40 minutes longer. Let stand at least 10 minutes before cutting.
