This recipe comes from King Arthur Flour and has a lot of wiggle room for additions and improvements!

Basic Whole Grain Cookies

Makes about 5 dozen cookies, with 2 cups of add-ins

½ C butter
1/3 C + 1 T sugar
1/3 C brown sugar
½ tsp salt
¼ tsp baking soda
½ tsp baking powder
1 tsp vanilla extract
1 large egg
¾ C White Whole Wheat flour*
¾ C quick rolled oats, ground in a food processor or blender if desired
2 T orange juice, optional**
2 C chocolate or other flavor chips, nuts, and/or dried fruit, optional

Beat together the butter, sugars, salt, baking soda, baking powder and vanilla until well combined. Add the egg, beating until smooth. Scrape the sides of the bowl, and beat again until smooth. Add the flour and oats, beating to combine. Mix in orange juice and additions, if using.

Cover and chill thoroughly -- several hours or overnight.

Preheat oven to 375°F. Drop rounded teaspoons of dough (1" balls) onto lightly greased sheets, spacing them about 2" apart. Bake 13-14 minutes. For softer cookies, reduce baking time by 2 minutes. Cool on the baking sheets.

* White Whole Wheat flour is a King Arthur Flour product that gives a less "whole wheaty" result; you can sub regular whole wheat flour here and the cookie will still be delicious.
** Use the orange juice if you're using the additions. If you're making plain cookies, leave it out.
