Originally from Rachel. This is fast and easy and healthy and yummy and satisfying and yum!!! The kids liked it, too!

Black Bean & Sausage Casserole

1 bell pepper, chopped
1 onion, chopped
1 cup brown (or parboiled for faster cooking) rice
1-2 cup corn
15 oz can black beans (drained and rinsed)
14.5 oz can vegetable or chicken broth
1 can mexican style tomatoes
1 cup water
2 tsp chili powder
1 tsp cumin
About 1 lb spicy kielbasa, sliced

Preheat oven to 375°

Dump everything into a large (9 x 13" or 10 X 14") baking dish and stir well. Cover tightly and bake 1-1 ½ hours until rice is tender.
