I scrounged this up out of my bookmarks (here) one day when I had nothing in my cupboards except chicken, and a few basic staples. Voila: Dinner!

Bourbon Chicken

1-2 T olive oil
2 lbs boneless chicken breasts, cut into bite-size pieces
1 garlic clove, crushed
¼ tsp ginger
¾ tsp crushed red pepper flakes
¼ C + 2 T apple juice or cider, divided
1/3 C light brown sugar
2 T ketchup
1 T cider vinegar
½ C water
1/3 C soy sauce
1 T cornstarch

Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Meanwhile, combine garlic, ginger, red pepper flakes, ¼ C apple juice, sugar, ketchup, vinegar, water and soy sauce in small bowl and mix well to dissolve. Pour over chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes. About 5 minutes before it's done, combine the 2 T apple juice with the cornstarch, pour in to the hot mixture and combine.

Serve over hot rice.
