Good brownies from Averie Cooks. Why the name? Not sure. Maybe they'll help you catch a man. Maybe they'll help you get over one. Maybe they're a good substitute for one.

Boyfriend Brownies

2/3 C butter
1½ C granulated sugar
¼ C water or coffee
2 12-oz bags chocolate chips, divided
4 eggs
2 tsp vanilla extract
1½ C flour
1 tsp baking soda
½ tsp salt

Preheat oven to 325°F. Line a 9" × 13" pan with aluminum foil and spray with cooking spray; set aside.

In a medium saucepan, bring the butter, sugar, and water or coffee to a simmer over medium heat, whisking nearly continuously until butter has melted and sugar has dissolved (it's okay if it's still slightly grainy). Turn off the heat, add one bag of chocolate chips, and whisk until the chocolate has melted. Transfer the mixture into a large mixing bowl. Add the eggs and vanilla and whisk vigorously until smooth and shiny. Add the flour, baking soda, and salt, and gently stir to combine; don’t overmix. Stir in the remaining chocolate chips.

Pour into prepared pan and bake for about 45 to 50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs; don’t overbake. Allow the brownies to cool for at least 30 to 60 minutes before slicing and serving. Brownies will keep airtight at room temp for up to 5 days.
