I got this recipe from my friend e. The kids loved this stuff. I liked it a lot, too, although I really longed for it to have a bit more texture -- I served it as a main dish, and even with shredded cheese and crushed crackers stirred in, it didn't seem filling enough. It would probably be more satisfying if served with sandwiches or some other sturdy accompaniment. Still, yummy!!!

Creamy Cauliflower Soup

5 C chicken broth
1 ½ - 2 C cubed potatoes
1 ½ - 2 C chopped celery
5 C cauliflower pieces
1 small chopped onion
1 minced garlic clove
1 T oil

Simmer chicken broth, potatoes and celery for 10 minutes. Add cauliflower and simmer 15 minutes.

Meanwhile, in a small pan sauté onion and garlic in the oil, and add to soup. Season to taste with salt and pepper, and a little hot sauce if desired.

In food processor or blender, purée soup until creamy smooth.
