Yeah. There's a pound of cheese in here. Don't make this every day. But it's delicious, either for brunch or as a side dish with barbecue or Mexican food.

Easy Chili Relleno Casserole

½ lb Monterey Jack cheese, grated
½ lb Cheddar cheese, grated
1 can chopped green chilies
½ mild onion grated, or chopped fine
2 medium eggs
1 ½ cups millk
1 ½ Tablespoons flour
chopped green onions

Spray an 8" square Pyrex pan with cooking spray. Place half of the cheeses in the pan. Top with the chilies and grated onion. Top with rest of cheeses. Beat the eggs and the milk and flour together and pour over the casserole. Sprinkle chopped green onions over top and bake at 350 degrees about 35-40 minutes until golden and set.
