This is fast and delicious. You can make it all in the pan, for faster clean-up, although it's a bit tricky to get the batter completely mixed if you go the bowl-less route. But the best part about this recipe is that there are no eggs in it, so your kids can help you lick the bowl!

Chocolate Banana Snack Cake

2 very ripe medium bananas
1 ¼ C flour
¾ C sugar
¼ C cocoa
1/3 C oil
1/3 C water
1 tsp baking soda
1 tsp white vinegar
¼ tsp salt
1/3 C chocolate chips

Heat oven to 350°. Place bananas in ungreased 8" square pan; mash with fork. Stir in flour, sugar, cocoa, oil, water, baking soda, vinegar and salt. Sprinkle chocolate chips over batter. Bake 35 to 37 minutes or until done. Cool completely, about 45 minutes.
