This is a darn fine way to use up that giant zucchini your husband just brought home. Ask me how I know.

Chocolate Zucchini Bread

2 (1 oz) squares unsweetened chocolate
3 eggs
2 C sugar
1 C vegetable oil
2 C grated zucchini
1 tsp vanilla extract
2 C flour
1 tsp baking soda
1 tsp salt
¾ C semisweet chocolate chips

Preheat oven to 350° F. Lightly grease two 9 X 5" loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.

In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour, baking soda, and salt. Fold in the chocolate chips. Pour batter into prepared loaf pans.

Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

VARIATION: You can make 2 dozen muffins instead of 2 loaves -- bake for, oh, say, 20 minutes or so...
