I got this recipe from bakingsheet -- one of my favorite recipe blogs. It is a really nice quick bread that's not too sweet, and equally delicious as a sweet snack or a toasty breakfast.

bills Coconut Bread

2 eggs
1 ¼ C milk
1 tsp vanilla
2 ½ C flour
2 tsp baking powder
½ tsp salt
2 tsp cinnamon
1 C caster sugar*
2 C shredded coconut**
1/3 C butter, melted

Preheat oven to 350°F. Grease and flour a loaf pan.

Whisk together eggs, milk and vanilla. Set aside.

Sift together flour, baking powder, salt, cinnamon. Stir in sugar and coconut. Make a well in the center and pour in egg mixture. Stir until just combined.

Add butter and stir until just smooth, being careful not to overmix.

Pour into prepared pan and bake for 1 hour, or until tester comes out clean.

Cool in tin for 10 minutes, then transfer to a wire rack.

* Caster sugar is the same as superfine sugar, which is the same as granulated sugar that you've whizzed in your blender or food processor for a minute.

** I use sweetened. If you prefer to use unsweetened coconut, increase the sugar slightly.
