This came from The Pioneer Woman. It's not the fastest way to make potatoes, since you have to boil them and bake them, but man, it's worth the extra time.

Crash Hot Potatoes

New potatoes (or other small round potatoes)
Olive oil
Salt
Pepper
Rosemary (or other desired herbs)

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make, and cook them until they are fork-tender.

On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet, leaving plenty of room between each one.

With a potato masher, gently press down each potato until it slightly mashes, then rotate the masher 90° and mash again. Brush the tops of each potato generously with olive oil.

Sprinkle potatoes with salt (Kosher salt if you have it), pepper (freshly ground black pepper if you have it), and fresh chopped rosemary (or the herb of your choice).

Bake in a 450° oven for 20-25 minutes, until golden brown.
