Crockpot Curry Chicken

1 ½ lb boneless skinless chicken, quartered
1 C chopped onion
3 C cubed peeled potatoes
1 chopped apple
at least 2 T curry powder
1 14-oz can chicken broth

2 C uncooked Minute Rice
2 C frozen peas, thawed

Place meat, onion, potatoes, apple, curry powder and broth in crockpot. Cover with lid and cook on low for 8-10 hours or on high for 5 hours. Stir in rice and peas. Cover and cook an additional 20 minutes.

Makes 6 servings.
