I got this from The Working Mother Cookbook. We like it with apples, but this recipe is very versatile (see note below)! This crust is so yummy and so easy, you may want to double that part of the recipe so there's more of it. You can make the crust part ahead, stored as crumbs in a tightly covered container in the fridge for 3 days, or pressed into a pie tin, then wrapped tightly and frozen (tin and all) for up to a month.

Fruit Crumble

1 C flour
1 C oatmeal
½ C sugar
¼ tsp salt
½ C butter, melted
6 tart apples, such as Granny Smith, peeled and thinly sliced*
¼ tsp cinnamon

Preheat oven to 400°. In large bowl, combine flour, oatmeal, sugar, and salt. Add melted butter, stir to combine. Press 3/4 of mixture into 9" pie tin.

In large bowl, combine apple slices with cinnamon. Evenly spread over crust in pan. Sprinkle with remaining crumbs. Bake 40 minutes, until fruit is bubbly.

* This recipe works with any fruit or berry, although you may need to adjust the sugar and baking time.
