This was Alice's tenth birthday cake. I skipped the glaze and made it with our traditional birthday cake frosting, with lemon extract added. Mmmm!! (This recipe came from the Land O'Lakes website.)

Lemon Snack Cake

1 ¼ C flour
1 C sugar
1 ½ tsp baking powder
½ tsp salt
1 egg
2 tsp freshly grated lemon peel (I used 1 tsp lemon extract instead)
¼ C butter, melted
¾ C milk

Glaze:
¾ C powdered sugar
1 T butter, melted
2 to 3 tsp lemon juice (add enough for desired consistency)

Heat oven to 350°F. Combine flour, sugar, baking powder and salt in lightly greased 8" square baking pan. Make 2 indentations in flour mixture. Set aside.

Combine egg and lemon peel in small bowl with fork; pour into 1 indentation. Pour ¼C melted butter in other indentation. Pour milk over all; mix well. (Some lumps will remain.)

Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely.

Combine glaze ingredients in small bowl. Spread glaze over cooled cake.
