I got these from Baking Bites. I love Baking Bites. Now, you may be saying, "beanmom, what is this? Another recipe for banana bread? Why bother?" But these are not quite banana bread, they're bars -- firmer and springier, for easy eating out of hand without crumbs -- and that tiny bit of nutmeg changes the flavor to something totally unexpected and lovely.

Monkey Bars

1 1/4 C flour (I like to use about half whole wheat)
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
2-3 medium bananas (3/4 - 1 cup mashed banana)
2 T butter, melted
2 eggs
1 C sugar
1 tsp vanilla extract
1/2 C chocolate chips

Preheat oven to 350°F. Lightly grease a 9-inch square pan.

In a medium bowl, whisk together flour, baking soda, salt and nutmeg.

Blend bananas in a food processor, or just whisk the hell out of them, until they are smooth. Add in melted butter, eggs, sugar and vanilla and mix thoroughly. Pour banana mixture into flour mixture and stir until just combined. Fold in chocolate chips.

Pour batter into prepared pan (it will be a thin layer).

Bake for 20-25 minutes, until a tester comes out dry. Cool before slicing.

Makes 16 bars.
