I found this recipe on AllRecipes.com about 10 years ago, and then I lost it, but I remembered it so well that I had to go looking for it again, a decade later. Totally worth the effort.

Mulligatawny Soup

1 C chopped onion
4 stalks celery, chopped
2 carrot, diced
1/2 C butter
3 T flour
1 T curry powder (or more if you like)
8 C chicken broth
1 apple, peeled, cored and chopped
1/2 C uncooked rice (white or brown)
2 skinless, boneless chicken breast halves, cut into cubes
salt & ground black pepper to taste
¼ tsp dried thyme
1 C heavy cream, heated (this can be omitted if you're a wimp)

Saute onions, celery, carrot, and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.

Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.

Just before serving, add the hot cream.
