Originally from Betty Crocker, this is creamy, cool, and super easy to make!

No-Bake Lemon Icebox Pie

1 ½ C graham cracker crumbs (10 to 12 whole crackers)
¼ C brown sugar
Pinch of salt
6 T butter, melted
8 oz cream cheese, softened
1 can (14 oz) sweetened condensed milk
½ C freshly squeezed lemon juice
1 T grated lemon peel

In medium bowl, mix first four ingredients. Press evenly into ungreased 9" pie plate. Refrigerate 1 hour.

In large bowl, beat remaining ingredients until smooth. Spread evenly in crust. Refrigerate at least 4 hours. Serve with whipped cream if desired.
