Originally from AllRecipes, where they call them "Big Germans". Whatever. These are very eggy -- you need to top them with something strongly-flavored like sugar and lemon juice, or syrup, or (my personal favorite) sliced and sweetened fruit with whipped cream. Yum.

Oven Pancakes

4 eggs
¼ tsp salt
1 C all-purpose flour (can use half whole-wheat)
1 C milk
½ tsp baking soda
1 tsp vanilla
5 T butter

1 T lemon juice*
2 T confectioners' sugar*

Preheat oven to 425°F

In a mixing bowl, combine the first six ingredients (eggs through vanilla). Use a blender if desired. Melt the butter in a 9x13 inch baking pan, or split it between two pie pans. Pour the contents of the mixing bowl into the pan(s).

Bake for 15 to 20 minutes until the mixture rises. Serve at once. Sprinkle lemon juice and powdered sugar on top at the table*.

* This is only one possible topping. I prefer to slice strawberries, mix them with the lemon (or lime) juice and sugar, and spoon them over the hot pancakes. Other topping possibilities abound.
