Originally from The Fannie Farmer Junior Cookbook, this bread isn't overly peanutty, and it's not super-sweet. It's nice as a snack or a light breakfast.
2 C flour (I use 1 C all-purpose and 1 C whole wheat)
1/3 C sugar
2 tsp baking powder
1 tsp salt
1 C milk
1 tsp vanilla
¾ C chunky peanut butter
Preheat oven to 350° and grease a 9 X 5" loaf pan.
Sift the flour, sugar, baking powder and salt into a large bowl. Combine the egg, milk and vanilla and add, along with the peanut butter. Mix well. Pour into prepared pan and bake about 50 minutes.
