Originally from AllRecipes.com. If you're from Amish Country like I am, you'll probably want to add some chopped hard-boiled egg to this. No matter where you're from, a handful of crushed crackers goes nicely here.

Easy Potato Sausage Soup

2 onions, chopped
½ C butter
4 C diced potatoes (about 4 or 5 medium)
1 (10 oz) package frozen diced carrots
1 lb Polish sausage, sliced
1 green bell pepper, chopped
3 C water
1 tsp salt
½ tsp ground black pepper
3 C milk
½-1 C dry potato flakes

Using a large saucepan, brown onion in butter. Add potatoes, carrots, sausage, green peppers, water, salt and pepper. Cook on low for about 45 minutes or until the potatoes are creamy. Add milk and cook until heated through, then stir in the potato flakes. (If you want a creamy potato soup, use ½ cup; if you want your soup thick like stew, add 1 cup.) Let soup sit for approximately 5 minutes in order to thicken and then serve.
