I love a nice pound cake!! I got this from AllRecipes.com, but I tweaked it a lot. Instead of shortening + butter flavoring (ew!), I just used good old-fashioned butter. I think that's a much better idea. I also removed the chocolate chips (because I prefer my pound cake unadorned) and substituted for the buttermilk, because I never have buttermilk on hand. There's nothing wrong with adding chocolate chips or using buttermilk, so go ahead if you want.

Pound Cake

1 C sugar
½ C butter
2 eggs
1 tsp vanilla
½ C plain or vanilla yogurt
1 ½ C flour
¼ tsp baking soda
½ tsp salt

Preheat oven to 300°F and grease and flour a 9" loaf pan. Sift flour, baking soda and salt together and set aside.

In large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Add the flour mixture, alternating with the yogurt, and mix well.

Pour batter into prepared pan and bake at 300°F for 60-80 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
