I modified this from a recipe on Food.com. Some of the modifications were to improve the nutrition or flavor, some were to use up odds and ends from my cupboards, and some were because I didn't notice the "½ C water" in the recipe until after the muffins were in the oven. Oops.

Pumpkin Walnut Muffins

1½ C sugar
½ C brown sugar
½ C oil
3 eggs
1 tsp vanilla
1 (15 oz) can pumpkin
2 C white whole wheat flour
1 ½ tsp baking powder
1 tsp baking soda
½ tsp ground cloves
¾ tsp cinnamon
½ tsp nutmeg
1 tsp salt
1 C chopped walnuts

Preheat oven to 400°F.

Mix together sugars, oil, eggs, vanilla, and pumpkin in a large bowl. Sift together all dry ingredients and add to mixture. Mix and add walnuts.

Let stand one hour at room temperature. Place in greased muffin tins and bake at 400° for 15 minutes.

Makes about 2 dozen.
