These are adapted from this recipe. I call them "Road Trip Cookies" because they're a sweet but semi-healthy snack, perfect to bring along on a road trip!

Road Trip Cookies

¾ C butter, at room temp
2/3 C natural peanut butter (contains only peanuts & salt)
1 C sugar
½ C packed brown sugar
1 tsp baking powder
½ tsp baking soda
2 eggs
1 tsp vanilla
1 ¼ C white whole wheat flour
2 C rolled oats
2/3 C mini chocolate chips
2/3 C lightly salted cocktail peanuts

Preheat oven to 375°F.

Beat together butter and peanut butter until well combined. Add sugars, baking powder and baking soda. Beat until combined. Beat in eggs and vanilla. Beat in flour. Stir in oats, chocolate chips, and nuts.

Drop by rounded teaspoons onto ungreased baking sheet. Bake 10-12 minutes or until light brown around edges. Remove to wire racks to cool.

Bar variation: Press into a lightly greased 15x10" pan. Bake 22-25 minutes or until cookies test done in the center. Cool on rack before cutting.
