I got this from The Spruce Eats. How easy is this? We eat this on nachos or in tortillas, but it would be euqally good over rice or baked potatoes.

Salsa Chicken

3 lb boneless skinless chicken thighs
16 oz peach salsa

Layer the chicken thighs with the salsa in crockpot, ending with salsa on top. Cover and cook on low 6-8 hours or until the chicken is tender and thoroughly cooked (165°F). Shred with two forks before serving.
