I rejoiced when I finally got a decent mandolin, because I could finally make things like this dish (from BigOven)!

Scalloped Potatoes and Ham

¼ C onion, chopped fine
¼ C butter
¼ C flour
1 ½ tsp salt
1/8 tsp pepper
2 ½ C milk
2 C cooked ham, cubed
5 large potatoes, thinly sliced

To make sauce, cook onion in butter until tender but not brown. Stir in flour, salt, and pepper. Add milk. Cook and stir until thickened and bubbly, then 1 - 2 minutes more.

In a 2-qt casserole, place half of the cubed ham and half of the sliced potatoes. Cover with half of the sauce. Repeat layers. Bake covered in 350°F oven for 45 minutes. Uncover, then bake about 30 minutes more or till potatoes are done.
