Originally from Tasty Palettes. This is a lovely quick meal for a summer evening!

Simple Phyllo Pizza

2 T olive oil
1 small clove garlic, finely grated
6 phyllo sheets
20-25 yellow and/or red cherry tomatoes, halved
½ C pepper jack cheese, shredded
1 tsp dried oregano
2 T shredded Parmesan
Salt & pepper

Preheat the oven to 450°F. In a small bowl, combine olive oil and garlic. Mix well and set aside.

Line a baking sheet or 9 x 12 pan with parchment paper or lightly greased foil. Lay 2 phyllo sheets on the parchment paper. Brush with oil/garlic mixture. Repeat twice to finish layering all 6 sheets. Brush the top with remaining oil mixture. Evenly spread pepper jack cheese and tomatoes. Sprinkle with oregano, salt and pepper. Bake for 12 to 15 minutes. Remove from the oven, sprinkle with parmesan cheese. Serve warm.

Notes - I double the phyllo when I make this so I can make two pizzas -- a decent light meal for my family. You can vary the toppings, as long as you don't overload the delicate crust.
