This comes from allrecipes, but I've modified it a bit. This is another nice way to use up extra bread, if you're not in a bread pudding kind of mood.

Slow Cooked Apple Brown Betty

3 C peeled, diced apples (3-4 apples)
About 10 slices bread, cubed
½ tsp ground cinnamon
¼ tsp ground nutmeg
pinch salt
¾ C brown sugar
½ C butter, melted
½ - 1 C coarsely chopped walnuts

Place apples in crock of a slow cooker. In a medium bowl, toss together the bread cubes, spices, salt, and brown sugar. Place on top of the apples and drizzle with the melted butter. Cover and cook on low for 3 hours, or until apples are tender. Sprinkle walnuts over top before serving.
