Another winner from The Six O'Clock Scramble! So fast and easy and good. What more can I say?

Tortilla Casserole

1 can (15 oz) pinto or black beans, drained
1 can (11 oz) condensed tomato soup
1 can (11 oz) corn kernels, drained
1 C mild salsa
½ C milk
6 soft-taco-sized flour tortillas, cut into 1" pieces
1 C shredded Cheddar cheese, divided

Preheat oven to 400°F. In large bowl, combine all ingredients, reserving half the cheese.

Place mixture in 2-qt casserole, cover with foil, and bake for 30 minutes. (For a crunchier top, remove the foil and broil the casserole for the final 5 minutes.) Remove from oven, uncover, and sprinkle with remaining cheese. Top with crumbled tortilla chips if you like more crunch.
